Cookery instructor Nimmy Paul shows us how to arrange your kitchen and crockery in an elegant and functional manner

Kochi-based Nimmy Paul, who runs the cooking school Nimmy & Paul, knows a thing or two about the perfect kitchen. She’s been running her school for over two decades and has hosted thousands of people in her home. Between culinary classes, events, and dinner parties, she has designed her kitchen and cupboards to create a space that is functional, appealing, and welcoming. The kitchen is the heart of the home, and Nimmy’s tips will help you keep things organised and elegant.

 

1. Minimise Closed Shelving, Opt for Open Shelving

In Nimmy’s opinion, open shelving looks great since it is lighter on the eyes and doesn’t make the room feel cluttered and closed-off. Plus, displaying cookware and serve-ware on open shelves is a great way to decorate.

 

2. Design Your Pull-outs Based on What You Have

Nimmy suggests getting custom pull-outs made, rather than fitting in a modular one. You know best what utensils, crockery, and cutlery you own, their proportions, how often you use them, and how you store them. Designing around your utensils ensures everything has its place.

3. Add Storage Wherever You Can

Even if you are not a culinary instructor like Nimmy, you still need storage. Add storage where you can so that nothing is out of place or languishing on the counter. Nimmy’s kitchen island, for example, has storage for all the things Nimmy needs handy during her cooking sessions, including a dedicated rack for her masala box. Other spaces can be used for storage too, like adding cabinetry all the way up to the ceiling, or a magnetic knife rack on the wall.

4. Add Louvres to Your Closed Shelves

There are certain large vessels and cooking utensils that can’t be placed on open shelves.  These vessels, along with extra crockery, have to go inside closed shelves or cupboards. Nimmy insists on louvred doors for closed shelves so that utensils get some “breathing space” and don’t catch odours.

 

5. Keep Spices at Arm’s Length

Nimmy has placed her spices on a wall shelf, right next to the stove. This way, she can reach for her spices and seasonings as she cooks, without having to step away from the burner. Nimmy has organised her spices in the order she adds them to a dish; but you can organise yours based on your cooking style. Think of the spice shelf as a permanent mise en place.

6. Mix up Your Crockery

When it comes to crockery, most of us own it in two main materials: glass and porcelain. There’s also ceramic, terracotta, and metal. The key is to display different materials together, instead of grouping all your glassware on one shelf and porcelain on the other. Glass by itself can be rather monotonous, so interspersing clear glassware with porcelain and other materials adds more life and colour.

 

7. Mix in Décor with Your Crockery

All of us have collected tchotchkes and trinkets and decorative objects from our travels. Just because you can’t use them for food and drink doesn’t mean they don’t deserve a place on your shelf. Place small glass figurines, souvenirs, thimbles, and other bric-a-brac between your serve-ware and plates to make each shelf a little more interesting.

 

8. Make DIY Plate-holders

Large and heavy plates need to be placed carefully, leaning against the back of the shelf. Ideally, you use a plate holder to keep the plate from falling. But if you don’t have a plateholder, use a cloth napkin. Fold it to the right size and place it under the plate. The cushioning keeps it from slipping and your plate stays put when you open the cupboard or move things around. Use pastel or embroidered napkins to make it colourful. But be sure to stick with cotton napkins, synthetic and silk napkins don’t have adequate grip.

9. Club Your Drinkware and Arrange by Height

When it comes to drinkware, Nimmy recommends placing your glasses together in a slim tall cupboard or bar, and arranging them by height, with the tallest at the bottom. There’s a practical reason why you should keep your taller glasses on lower shelves and short/shot glasses above—taller glasses are easier to pick up when you bend down!

10. Follow Symmetry in Arrangement

Imperfections are what makes a home special and the same goes for crockery. Everyone has a mixed collection of pieces acquired over the years and not everything will match. You can create a sense of order by arranging them in a pattern—combine pieces by shape, height, size or even the style group.

 

Your kitchen and everything that comes with it, from the furniture and appliances to the utensils and crockery, have a distinct function. But when designed and displayed the right way, they can be so much more—a visual break in the middle of a busy day, a memory bank, a conversation starter. Nimmy says it’s not about a perfect arrangement but about creating a vignette that shows your personality and tells a story.
