Balcony or a garden, here’s how you can have a barbecue regardless of the space you have. Read on for our product picks, and menu ideas from Chef Chinu Vaze
There’s a nip in the air, you’re bringing your woolens out, and you’re seeing winter vegetables in the market. And that means it’s a good time to have a cozy get together, and what better than in the form of a barbecue.
The idea of grilling or lighting a fire may seem daunting at first, but you don’t need to be Martha Stewart or Bear Grylls to make it happen… here are a few tips to help you host a fun winter evening by the grill.
Setting up your grill comes first. Choose a spot that is open and airy enough to avoid making your guests feel uncomfortable. Grilling does generate a fair amount of smoke and heat, after all! And it goes without saying, your grill should be at a safe distance from anything that could be a fire hazard.
There are many things to consider when choosing a grill, the most obvious being size and you can choose a small or large grill based on the space you have. But there’s also the question of whether to opt for an electric, charcoal or gas grill. Here’s how.
Barbecuing is both an art and a science. Your grill should pre-heated before you begin. Electric and gas grills heat up quicker, old-school charcoal grills take more time. The kind of charcoal used plays a key role in any barbecue, and you’ll need to decide between lump charcoal or charcoal briquettes based on the cut of meat and how long you will be grilling it.
Boneless kebabs or corn, for example, won’t take too long to cook, but if you are slow-roasting chicken or meat, you will need to have your grill going for a fair amount of time. Lump charcoal has a shorter burn time while briquettes can last up to three hours, so pick accordingly.
You also need to have the right tools to work the grill: your average spoons, knives and spatulas aren’t engineered for the high heat of a grill, so invest in grill-friendly tongs, spatulas, skewers, barbecue brushes, and knives.
Even with a grill burning, it can still get pretty cold on the balcony. So, make sure you have some additional heat and light sources. Portable LED lanterns, candles, and votives can be used for extra light. Comfy floor cushions and rugs can create help create a cozy vibe. Throw in some warm cocktails and hot chocolate and you’re all set to enjoy the crisp winter air!
Speaking of hot chocolate, be sure to keep your guests satisfied with plenty of good food! That’s the whole point of a barbecue, after all. We spoke to the hostess with the mostest and author of the cookbook Party Like a Star, Chef Chinu Vaze, for her tips on how to host a stress-free barbecue.
Chinu Vaze: Clean your barbecue!! And oil it well! Fat is your friend. I have a whole chapter on barbecues in my cookbook.
CV: More marination, more flavour! Couple of hours at least is good. Also, remember not to put very sweet things like honey or sugar as they can burn on a barbie.
CV: Wrapping veggies up in foil with some yummy spiced butter or pesto or Asian marinades is my favourite way to use veggies on the bbq
CV: Have some other hot and cold food so all the stress isn’t on the barbecue. And keep drinking cold beer!
